Big Tex Guacamole
This is one healing dish that everyone in my family of 5 loves! It is a great snack for any occasion and a filling, energizing meal, when the recipe is doubled or tripled, depending on how many share it with you.

Ingredients:
2 ripe avocados
1 cup tomatoes, chopped
1/4 cup red onion, minced
2 garlic cloves, minced
1 jalapeno pepper, minced
1/4 cup cilantro, minced
1/4 cup lime (or lemon) juice
1/2 tsp sea salt
1/4 tsp ground pepper
Directions:
1. Slice the avocados in half lengthwise, remove the pits and scoop the flesh into a flat casserole dish. Add all the remaining ingredients. Mash everything together well with a potato masher until you achieve a chunky-smooth consistency. Enjoy!
2. Serve immediately or store in a tightly sealed container in the refrigerator for up to 4 hours.
