Spiced Stewed Apples
Beautiful Autumn, Friends! Our local trees are glowing burnt orange, and it's dreamy. As we are in the heart of apple season, I have to share a favorite, simple, comforting, healing recipe. It is a wonderful way to start the day. It can be a perfect dessert in the evening, too. And apples are so good for our liver health. This recipe serves 2-4 people. Enjoy!
Ingredients:
4 apples, cored and sliced
1 Tbsp of ghee (or coconut oil)
1 cup of water
2 Tbsp maple syrup (or equivalent sweetness of stevia)
1-2 inches of fresh ginger root, peeled + grated (optional)
2 tsp cinnamon
Directions:
In a frying pan, warm the ghee, cinnamon and ginger (if using). Add the apple slices to the pan and stir to coat all the pieces. Fry for a few more minutes, then add the water and syrup or stevia.* Mix well and let it continue to cook to desired tenderness, about 5-10 more minutes.
*For variety, when you pour in the water, add raisins or chopped dates or chopped figs or add unsweetened coconut flakes or nuts or seeds of your choice, and let these additions soften a bit with the remainder of your cooking time.
