Crunchy Detox Salad

For dinner last night, I made a favorite salad that I've enjoyed many, many times on my healing journey. It's hearty, crunchy, flavorful, would pack great for a picnic, and you need to know about it.:)


Crunchy Detox Salad

Ingredients:

4 c. of cauliflower and/or broccoli 

1 c. cabbage

1 c. carrots

1 1/2 c. parsley 

1 c. celery

1/2 c. raw almonds

Shred or chop above ingredients well and mix thoroughly together in a big bowl. Stir in the below ingredients next.

1/2 c. raw sunflower seeds

1/3 c. organic raisins 

For dressing, whisk the following ingredients in a bowl before pouring and mixing into the salad:

3 Tbsp. extra virgin olive oil

1/2 c. lemon juice

2 Tbsp. raw honey

1 inch of ginger root, grated 

1/2 tsp sea salt

Make sure there is plenty of dressing to thoroughly coat everything.
